I'm a really big fan of jicama, have you tried it? It has the texture of a crisp apple, but with a different flavor that's mild and refreshing. I've used it in this Spicy Watermelon and Jicama Salsa, in this Jicama Salad, and on skewers with Melon and Cucumber! With this recipe, I've made it into a tasty slaw! How to Make Low Carb Jicama Slaw
Peel the jicama and cut it into matchsticks. This will take some time unless you have a clever kitchen gadget, or (like me) you buy them ready prepared in sticks, then cut them into smaller pieces. Add them to a bowl and add chopped roasted red peppers (out of a jar is fine), chopped green onions, oil, lime juice, black pepper, and salt.
I also added a chopped fresh jalapeño (deseeded!) because I enjoy the taste and heat! Mix everything together well, then keep in the fridge until required.
Enjoy this slaw as a side dish to grilled meat or fish!

Low Carb Jicama Slaw

Ingredients
- 10 oz jicama, peeled and cut into matchsticks
- ¼ cup chopped roasted red peppers
- 2 green onions, chopped
- 1 tbs olive oil
- 1 tbs lime juice
- black pepper and salt
- 1 small jalapeño, finely chopped
Instructions
- Add all the ingredients to a bowl and mix everything together.
- Store in the fridge until required.
