So my habit of crusting pork products in pork rinds isn't exactly new - see Pork Rind Crusted Bacon and Pork Rind Crusted Pork Tenderloin - but I really wanted to try it with pork chops - especially since I discovered that you can buy them ready-made. It feels REALLY lazy to buy them - because I'm perfectly capable of buying pork rinds and bashing them into crumbs myself. But these are so fine - and unbelievably convenient!
I love brands Pork Panko and Pork King Good - both are fantastically seasoned and SO convenient.
This recipe is great for a weeknight dinner - it's quick and easy to prepare, and with just a few ingredients and little effort, you get a ton of flavor!
