Just because low-carbers can't eat pasta doesn't mean we can't eat a delicious meat sauce like Bolognese! I decided to make this version using the slow cooker function of my Instant Pot and my house smelled amazing ALL DAY! And if you're wondering what to serve this sauce with, you might like to check out my list of low carb spaghetti alternatives!
How to Make Low Carb Bolognese in the Slow Cooker
Before you go flinging food in the slow cooker, it is advisable to brown off the meat first. This will remove excess water and fat and will drastically improve your sauce! Heat some olive oil in a large skillet and add some ground beef – if you're using non-stick then you might not need the oil. Break up the beef and keep cooking until it has all browned.
While it cooks, add some canned tomato sauce, red wine (optional – but really adds flavor), onion powder, garlic paste, Italian seasoning (or dried oregano and basil), and bay leaves to a slow cooker (or you could use the slow cooker setting on an Instant Pot!).
Drain the meat and discard the liquid. A slotted spoon is a useful tool for this job – you can then spoon the beef straight into the slow cooker. Stir well.
Cook on high for four hours or low heat for 8 hours. It will smell soooooo good! Check for seasoning and add salt and pepper to taste.
And you don't need to even find a spaghetti alternative if you don't want – you could also serve this sauce over low carb nachos or just ladle some into a bowl and top it with some grated cheese!!!
