I've been playing around with various caramel sauces for years now. First came the perfect-for-fall low carb caramel apple sauce, then the caramelized pecans and also the low carb donuts with a caramel glaze.
But I wanted to create something that was perfect for pouring over a simple vanilla ice cream, and so I begun experimenting again. And I am SUPER happy with the result. It's quick, it's easy, and OHHHH so good! Just to take a look at the recipe list – nothing weird or wacky. All things you might already have in the kitchen!

How to Make a Low Carb Caramel Sauce
Place some butter and granular low carb sweetener in a small saucepan over a low-medium heat. For the sweetener I used Lakanto – and you can get 20% off anything in their store if you use coupon code SAFTC!
Cook for 3-4 minutes until the mixture turns golden brown.
Add some heavy cream and a little salt, and simmer until the sauce has thickened, about 5 minutes.
Stir in some vanilla extract to finish. Serve the sauce warm or transfer to a storage container and let cool.
This sauce will firm up as it cools. To make it more liquid, place it in the microwave on half power for about 15 seconds.
Serve this sauce over low carb ice cream!!!
Also, I've only given measurements for a small amount of sauce, as it's all that I personally need. But it's super easy to double the amount!

- 2 oz (4 tbs) unsalted butter
- 2 tbs granular sweetener, eg classic Lakanto
- ¼ cup heavy cream
- pinch of salt
- ½ tsp vanilla extract
Instructions
- Place the butter and sweetener in a small saucepan over a low-medium heat. Cook for 3-4 minutes until the mixture turns golden brown.
- Add the heavy cream and a little salt, and simmer until the sauce has thickened, about 5 minutes.
- Stir in the vanilla to finish.
Notes
This sauce will firm up as it cools. To return it to pourable state, place it in the microwave on half power for about 10-15 seconds.

I store it in the fridge. It does solidify, so I just spoon some out and reheat in the microwave!
