OK, I confess. I've wrapped a lot of things in bacon in my time! From meatballs to cherry peppers to pork tenderloin, bacon imparts a fantastic flavor and texture.

How to Make Bacon-Wrapped Zucchini
Cut the zucchini lengthwise into quarters.
Season generously with black pepper, then wrap each one in a slice of bacon, and place it on a non-stick baking sheet.
Roast in a preheated oven for around 30 minutes or until the bacon is cooked through and crispy.
Meanwhile, make the dip by combining sour cream, chopped green onions, and black pepper. For a dairy free option you could use barbecue sauce or anything else you fancy!
Let the bacon zucchini cool for five minutes before serving (you might also like to drain them on paper towels) – the naturally high water content in the zucchini can be pretty hot!

- ½ cup sour cream
- 2 green onions, finely chopped
Instructions
- Preheat the oven to 400F (200C).
- Season the zucchini generously with black pepper, then wrap each one in a slice of bacon, and place it on a non-stick baking sheet.
- Roast for around 30 minutes or until the bacon is cooked through and crispy.
