Welcome to the fourth green cabbage-tastic recipe on my site! For completeness I'll also give a shout out to my recipe for Red Cabbage with Cranberries and Goat's Cheese!
But this recipe is all about green cabbage. I don't know about you but I'm reluctant to cook cabbage, and then – when I do – I can't understand why I don't eat it more often.
Is Cabbage Keto?
There are just 3g net carbs in cabbage for a 3 oz serving (check out my guide to low carb vegetables!). Green cabbage is a great source of vitamins B6, C, and K, plus folate and manganese. There can be twelve servings in a large head of cabbage, but for this recipe I've used a medium head, and the carb count works out to around 5g net carbs per serving. So, although cabbage is a low carb vegetable, it isn't SUPER low – so always make sure you check serving sizes.
How to Make Buttery Keto Cabbage in the Instant Pot
Cut the cabbage into bite-sized chunks. They don't have to be particularly even, just not *too* big.
Add some chicken broth to the bowl of an Instant Pot, then add the cabbage. Finish with some butter.
Close the lid of the IP and set the vent to Seal. Select Pressure Cook High, with a time of 5 minutes. Allow the Instant Pot to come up to pressure.
When the 5 minutes cooking time is over, naturally release the pressure. Drain the cabbage through a colander, and season well with salt and black pepper. I actually finished my cabbage with some pink Himalayan sea salt – one of the fabulous products that I received in last month's Keto Box! It's so fun to try new things!
Transfer to a serving dish or platter and add extra butter on top.
