  • 1 head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 3-4 tablespoons taco seasoning

  • 1 bell pepper, diced
  • ½ cup sliced black olives
  • ½ cup sliced pickled jalapenos
  • 2 cups shredded Mexican cheeses, such as cheddar or Monterey Jack
  • 1 medium avocado, diced
  • 1 fresh jalapeno, sliced (optional)
  • 2 tablespoons minced parsley (optional)

Instructions

  1. Preheat the oven to 425 F. Line a baking sheet with parchment paper.
