Cauliflower is a commonly used vegetable for low-carbers, especially to replace potato. Horseradish is the perfect addition that really lifts this vegetable and makes a tasty side dish!
Of course you can use a whole head of cauliflower to make this dish – but I usually use microwave steam-in-the-bag florets. I find that if I boil cauliflower the florets can end up too watery. For four servings, use two 10oz bags, and cook them until the cauliflower is super soft, around 7 minutes.
How to Make Horseradish Cauliflower Mash
Once the cauliflower is cooked, add cream cheese, prepared horseradish and seasoning, and mash everything together. I taste-test several times to get just the right amount of horseradish heat!
Season with salt and pepper. I prefer to use a potato masher and mash by hand – but for a smoother result (but more washing up!), you could whizz it all up in a food processor.
Transfer the mash to a serving bowl and sprinkle some finely chopped herbs like parsley or chives over the top. Grind some extra black pepper over and finish with a couple of slices of butter.
My non low-carbing husband actually prefers this dish to mashed potatoes as it is just as filling but doesn't leave him feeling too full. So this is a great side dish for mixed company! It makes a wonderful accompaniment to meat dishes like Baked Balsamic Chicken Thighs, Garlic Butter Pork Chops, or Herb Crusted Roast Beef.

Horseradish Cauliflower Mash
Cauliflower mash is a great side dish for low carbers - and this one comes with a kick!
Ingredients
- 20 oz cauliflower florets
- 2 tbs cream cheese
- 2-3 tbs prepared horseradish
- salt and black pepper
- 1 tbs chopped fresh herbs, eg chives
- 2 tbs butter
Instructions
- Steam or boil the cauliflower until soft, then drain.
- Place the cooked cauliflower into a bowl, add the cream cheese and horseradish, and mash together.
- Add salt and pepper as required; add more horseradish to taste.
- Spoon the cauliflower mash into a bowl and sprinkle with chopped herbs, more black pepper, and the butter.
