This horseradish cauliflower mash side dish is a low carb and lighter alternative to mashed potatoes.

Cauliflower is a commonly used side dish vegetable for low-carbers. Personally, I usually find it a little too, well, cauliflowery. Horseradish is the perfect addition that really lifts this vegetable!
I used microwave steam-in-the-bag florets to make this dish. I find that if I boil cauliflower not only does the slightly unpleasant smell fill the kitchen, but the florets end up too watery. For four people I use two 10oz bags, and cook them until the cauliflower is soft, around 7 minutes.
Once cooked, add cream cheese, prepared horseradish and seasoning, and mash everything together. I taste-test several times to get just the right amount of horseradish heat!
Then I transfer the mash to a serving bowl and sprinkle some finely chopped fresh chives over the top.
My non low-carbing husband actually prefers this dish to mashed potatoes as it is just as filling but doesn’t leave him feeling too full. So this is a great side dish for mixed company! - 20 oz cauliflower florets
- ¼ cup cream cheese
- 2-3 tbs prepared horseradish
- 1 tbs chopped fresh chives
- Cook the cauliflower until soft.
- Place the cooked cauliflower into a bowl, add the cream cheese and horseradish, and mash together.
- Add seasoning if required; add more horseradish to taste.
- Spoon the cauliflower mash into a bowl and sprinkle with chopped fresh chives.
