So you may remember my bacon and egg quesadilla from a few years ago – a recipe that I still love to make! But this takes the same idea to a whole new level! The concept is simple: crispy bacon, creamy scrambled eggs and melted cheese on a pizza base. They key to making it low carb, is of course the pizza base – so here are some options for you:

However, for this recipe I tried out a new product – a low carb crust from Kbosh! They have a fun variety of flavors, and they all contain 3g net carbs total.

How to Make a Low Carb Breakfast Pizza

Prepare the Kbosh pizza crust by placing it (straight from the freezer) into a non-stick skillet. Cook over a medium heat for a few minutes or until it starts to turn brown on both sides.

Transfer it to a baking sheet lined with a silicone mat. Use the same skillet to cook the bacon, and scramble the eggs with a little heavy cream in a separate pan.

When the eggs are nearly cooked, spread them over the pizza crust. When the bacon is almost cooked to your liking, remove it from the skillet and drain on paper towels. Remember that the bacon and eggs will cook more in the oven so it is OK if they are a little undercooked.

Chop the bacon and place it over the eggs.

Top everything with shredded cheese (I used a cheddar blend).

Roast in a preheated oven for 10-12 minutes or until the cheese has melted and starting to brown.

Transfer the pizza to a cutting board, let cool for 5 minutes, then serve.

Ingredients

  • 1 frozen Kbosh pizza crust
  • 4 slices bacon
  • 4 large eggs
  • 2 tbs heavy cream
  • salt and black pepper
  • 1 tbs olive oil
  • ½ shredded cheese (eg cheddar)

Instructions

  1. Preheat the oven to 400F.
  2. Prepare the Kbosh pizza crust by placing it (straight from the freezer) into a non-stick skillet. Cook over a medium heat for a few minutes or until it starts to turn brown on both sides.
  3. Transfer it to a baking sheet lined with a silicone mat. Use the same skillet to cook the bacon.
  4. Meanwhile, beat the eggs, cream, salt, and pepper together in a jug. Add the olive oil to a saucepan and add place over a medium heat. Add the egg mixture, and scramble, stirring occasionally.
  5. When the eggs are nearly cooked, spread them over the pizza crust. When the bacon is almost cooked to your liking, remove it from the skillet and drain on paper towels. Remember that the bacon and eggs will cook more in the oven so it is OK if they are a little undercooked.
  6. Chop the bacon and place it over the eggs. Top everything with the cheese. Roast for 10-12 minutes or until the cheese has melted and starting to brown.
  7. Transfer the pizza to a cutting board, let cool for 5 minutes, then serve.
