Stuffing is a traditional dish to be served alongside a roast turkey or chicken. Especially at occasions such as Thanksgiving and Christmas! Although the stuffing is often cooked inside the bird, it can also be roasted separately. Here's what Wiki says:
Most Thanksgiving turkeys are stuffed with a bread-based mixture and roasted. Sage is the traditional herb added to the stuffing, along with chopped celery, carrots, and onions. Other ingredients, such as chopped chestnuts or other tree nuts, crumbled sausage or bacon, cranberries, raisins, or apples, may be added to stuffing. If this mixture is prepared outside the bird, it may be known as dressing.”
I'm not sure I'd refer to this as a dressing, but if you think it should – let me know in the comments! I've taken many of the key elements from this description and put my low carb and keto spin on it. Low carb bread (yes!), sage, celery, onion (powder!), and crumbled sausage. The result is a fantastic combination of flavors that will complement your roast meat perfectly!
By the way, you could totally make this a vegetarian stuffing recipe by omitting the sausage and switching the chicken broth for vegetable stock. It would still taste delicious!
How to Make Low Carb Sausage Stuffing
Heat some olive oil in a large skillet and add the sausage meat. Cook for about 5 minutes or until almost browned all over, then add chopped celery, onion powder, and garlic. Cook for another 5 minutes.
Meanwhile, cut some low carb bread into small cubes.

Transfer the bread and cooked sausage to a large bowl. Add chicken broth, a beaten egg, and some chopped fresh sage. Season with salt and pepper.
Stir well, then spoon the mixture into a baking dish. Cover with foil, then roast in a preheated oven for 20 minutes. Remove the foil, then cook for another 8-10 minutes or until the top is crispy.

- 1 tbs olive oil
- 1 lb ground sausage meat
- 2 stalks celery, chopped
- 1 tsp minced garlic
- 1 tsp onion powder
- 4 slices low carb bread, cut into small cubes
- ½ cup chicken broth
- 1 egg, beaten
- 1 tbs chopped fresh sage
- salt and pepper
Instructions
- Preheat the oven to 350F.
