Coleslaw is such a great side dish that's typically low in carbs unless it has been sweetened. Here are some slaw recipes that I have on the site already:

With this recipe, I decided to make a version that was spicy and smoky – and it goes particularly well with grilled meat or fish! 

How to Make Low Carb Chipotle Coleslaw

In a large bowl, combine mayonnaise, a finely chopped chipotle in adobo sauce, some of the adobo sauce, and liquid smoke.

Taste for heat, and add more chipotles or sauce as required. If it's already too spicy – you'll need to add more mayo! Season with salt and pepper if required.

Add in a bag of coleslaw mix – mine was a combination of red cabbage, green cabbage, and carrot. Stir well to coat the vegetables.

Cover and store in the fridge for up to a week. 

When serving, I like to add a signal that the slaw is spicy by garnishing it with a jalapeño – otherwise unsuspecting guests might get more heat than they bargained for!

The spiciness is quite slow to build – you get the crunch of the vegetables and the creamy mayonnaise first, then the smoky chipotle flavor afterwards!

  1. In a large bowl, combine the mayonnaise, one chopped chipotle, a tablespoon of the adobo sauce, and liquid smoke. 
  2. Taste for heat, and add more chipotles or sauce as required. If it's already too spicy - you'll need to add more mayo! Season with salt and pepper if required.
  3. Add in the coleslaw mix and stir well to coat the vegetables.
  4. Cover and store in the fridge for up to a week.
