My favorite right now is the keto friendly bread from Natural Ovens – which I can buy in three different stores locally. It's zero carb (but NOT gluten free) and with no scary list of ingredients: Zero Net Carb Blend (Modified Wheat Starch, Wheat Gluten, Oat Fiber, Wheat Protein Isolate, Inulin), Water, Soybean Oil, Yeast, Salt, Vinegar, Calcium Propionate (Preservative), Potassium Sorbate (Preservative), Ascorbic Acid, Enzymes. The great thing about this dish is that it can be prepared the night before. Construct the casserole, then leave it in the fridge overnight. Then all you need to do is bake it!

How to Make a Keto French Toast Casserole

Cut the bread into cubes.

Place them into a casserole dish. In a jug, mix together eggs, unsweetened almond milk, sweetener (I used classic Lakanto), vanilla extract, and ground cinnamon.

Pour the egg mixture over the bread.

Cover and leave in the fridge for at least two hours (or overnight is just fine!). When you're ready to cook, uncover and bake in a preheated oven for 25-30 minutes until the center has set. Dust with some powdered sweetener (I used confectioner's Swerve), and serve warm.

I made this one weekend and luckily for me no-one else in my house wanted to have any, so I was sorted for breakfast for the next three mornings too – just heat up a portion in the microwave  and enjoy!!

  1. Spray a casserole dish with non stick spray. Cut the bread into cubes and place them in the dish.
  2. In a jug, mix together the eggs, unsweetened almond milk, sweetener, vanilla, and ground cinnamon. Pour the egg mixture over the bread.
  3. Cover and leave in the fridge for at least two hours (or overnight is just fine!).
  4. When you're ready to cook, preheat the oven to 375F. Uncover the casserole and bake in for 25-30 minutes or until the center has set.
  5. Dust with the powdered sweetener, and serve warm.
