My favorite right now is the keto friendly bread from Natural Ovens – which I can buy in several different stores locally (including Jewel Osco and Walmart). It's zero carb (but NOT gluten free) and with no scary list of ingredients AND it doesn't need to be kept in the fridge or freezer. But you can use whichever low carb bread you can source – it just needs to be slightly dry (or stale) for this recipe, otherwise the bread will soak up too much of the egg mixture.

If you only have fresh bread on hand, try popping the slices in the toaster for a short time so that they dry out a little bit (but don't toast them!). You could also do this in the oven if you happen to have it on. Use your best judgement depending on the condition of the bread you are using.

How to Make Low Carb French Toast Sticks

In a shallow bowl (that will fit the bread sticks into), combine a good quality granular low carb sweetener and ground cinnamon. For the sweetener I chose classic Lakanto – it has to be one that you like the taste of on its own! And get 20% off anything in the Lakanto store if you use coupon code SAFTC! Set the cinnamon mixture aside.

Remove the crusts from each slice of bread, then cut each slice into three sticks.

In a separate bowl, lightly whisk two eggs, heavy cream, and cold water together.

Melt some butter in a large non-stick skillet over a medium heat. Dip each bread stick into the egg mixture, turn to coat, and add to the skillet. You will need to work in 2-3 batches.

Turn each bread stick over and continue cooking until golden brown and sufficiently toasted so that it holds its shape. Roll each cooked stick in the cinnamon mixture and place on a plate. It is helpful to get someone to help you with this if you can!

Repeat until all the toast sticks are cooked (adding more butter to the skillet if needed) and tossed in the coating. A dipping sauce works really well with this dish – so here are a few low carb options for you:

I've been trying to find a keto french toast sticks recipe that ends up crunchy on the outside and custardy on the inside.. would you say this recipe is it?

I'm not sure I'd really say custardy, but they're definitely soft on the inside and crunchy on the outside!
