This low carb pull apart bread is made using “FatHead” dough, then formed into the shape of a cute lamb: perfect for Easter!

Have you tried FatHead dough yet? I've used it in several ways over the years , and you can read all about it in my Ultimate Guide to FatHead Dough! As you will see, I've mainly used the dough to wrap things or to contain things. But for this recipe – it's all about the enjoyment of the dough itself!
The idea for the pull-apart bread lamb came from a Croatian blog called La Cuisine Créativ, where they use a regular bread dough. But with with a bit of guesswork, translation, and using the photos as a guide, I was able to form this low carb version! By the way, you could also form the dough into any shape – how about a rabbit or a flower?

How to Make Low Carb Pull-Apart Bread for Easter
To make the FatHead dough, combine shredded mozzarella cheese and cream cheese in a bowl.
Microwave it for one minute. Stir, then cook for another 30 seconds.
The mozzarella should have melted and be super sticky! Add in almond flour, a beaten egg, salt and pepper. Stir well to combine.
Let the dough cool enough so that you can handle it, then knead until smooth. Add extra almond flour if it is too sticky to work with – a lot depends on the moisture in the cheese.

Form a ball for the head, and place it on a small baking pan lined with a silicone mat. Flatten it down slightly. Form the rest of the dough into small balls, and form the rest of the body shape. Use any scraps leftover to form feet and the ear.
Use three black peppercorns for the eyes and nose, and use a knife to mark in the cheeky smile! Finally, brush a little melted butter over the dough, then sprinkle some sesame seeds over the body of the lamb.
Note – the bread can be prepared in advance up to this stage!
Bake in a preheated oven for 10-12 minutes until golden brown on top.
Serve warm – your guests will love it!!! (And I bet they leave the head until last!). You could even serve it with some homemade butter!

- 1½ cups shredded mozzarella
- 2 tbs cream cheese
- 1 cup almond flour
- 1 egg, beaten
- salt and pepper
- 1-2 tsp melted butter
- 3 black peppercorns
- 1 tsp sesame seeds
Instructions
- Preheat the oven to 375F.
