A Moscow mule is a classic cocktail made from vodka, spicy ginger beer, and lime juice. It can be quite high in carbohydrates if a pre-mixed cocktail base is used, or regular high-sugar ginger beer.
In my focus on zero carb cocktails, I made a zero carb Moscow Mule – which was awesome!
Diet ginger beer can be tricky to find, although Zevia make one – available at Netrition! Diet ginger ale is much easier to find, and is what I've used here. As I've added some pumpkin pie spice – it really gives that extra zing that you'd expect from ginger beer.
Oh – and this cocktail really does have pumpkin in – not just the spice mix! Although it contains carbohydrates, you don't need very much, and the finished drink is just 1g net carb!
How to Make a Low Carb Pumpkin Moscow Mule
Add some pumpkin puree (100% pumpkin, not pie filling), pumpkin pie spice, vodka, lime juice, vanilla extract, and ice to a cocktail shaker.
Mix well, and divide the cocktail between two copper mugs. Top up with diet ginger ale or ginger beer, and add ice as necessary. Garnish with cinnamon sticks.
You'll love these autumnal flavors – all in one delicious refreshing cocktail!
