These chocolate dipped pecans are a wonderful low carb treat that everyone will enjoy!

Super simple to make, these chocolate dipped pecans will be popular with everyone! They’d even make a great gift if you can bear to part with them!
I used my favorite dark chocolate Lily’s Baking Chips for the chocolate – actually this was the first time I have tried melting them. Normally I just add them as whole chips to things like my Frozen Chocolate Chip Balls or as an Ice Cream Topping. The packet instructions suggest to melt them in a double boiler (or bain marie) but actually I just melted them in the microwave. For 32 pecan halves I used three servings of the chocolate chips – that’s 180 chips or 42g, however you prefer to measure!
Place the chocolate chips in a bowl, and microwave them in short bursts until the chocolate has fully melted.
Dip each pecan half into the chocolate, just so that the chocolate coats half the nut.
Place on a baking sheet or tray lined with parchment paper or silicone mat.
Leave until the chocolate has set, then store in an airtight container and keep cool. Either keep them for your own treats or share with others – non-low-carbers love these too!

- 42 g Lily's Dark Chocolate Baking Chips
- 32 pecan halves
- Place the chocolate chips in a bowl and microwave in small bursts until melted.
- Dip each pecan halfway into the melted chocolate, then place on a baking sheet lined with a silicone mat or parchment paper.
- Let the chocolate set, then transfer to an airtight container and keep cool.
