I was looking through my low carb Halloween recipes the other day and realized that they all include low carb tortillas: Halloween Chips, Halloween Jalapeño Poppers and Halloween Quesadillas!
So when I saw this recipe from Roxy's Kitchen I knew that I wanted to make my own version of it.
But it reminded me of my Pizza Dip recipe, with a base of cream cheese, then toppings, and baked or broiled. So I just *had* to take the original recipe one step further, and melt the cheese.
There are only three main ingredients, but you can always add other flavorings if you would like. Try pepper jack cheese instead of cheddar, or add some seasonings to the cream cheese – get creative!

How to Make a Low Carb Jack O'Lantern Dip
Spread some softened cream cheese onto a heat-safe plate (it will be going under the broiler, so no melamine, acrylic, or cardboard!!).
Sprinkle some shredded sharp cheddar cheese over the top of the cream cheese, adding a little extra at the top for a stalk.
To make the jack o'lantern detail, use finely chopped black olives. Arrange them to form eyes, nose, mouth – or whatever features you choose!
Place the plate under the broiler until the shredded cheese has melted. Serve immediately.
I served this with cucumber sticks, so I also added some to the stalk for a splash of color!
You could also serve this with homemade tortilla chips if you were missing those low carb tortillas!
