Just a few more spirits to go to complete the set… But this one is all about RUM. Now I will confess that I am more of a white rum person – I think only one recipe uses dark rum. Just so that you know! And don't forget simple combinations like rum and diet coke as shown in the main photo for this article – all you need is ice and a twist of lime and it's ready to enjoy!

And here's that new cocktail I promised! Low Carb Basil Lime Fizz!

Low Carb Basil Lime Fizz

Low Carb Basil Lime Fizz

Yield: 1 Serving (plus extra syrup)
Cook Time: 5 minutes
Steeping Time: 15 minutes
Prep Time: 10 minutes
Total Time: 30 minutes

This recipe starts by making a homemade basil-infused simple syrup - with lots of syrup left over! Fresh basil is then muddled with lime, followed by the syrup, rum, ice, and ginger ale.

Ingredients

For the syrup:

For the cocktail:

  • 2 lime wedges
  • 2 large basil leaves
  • 2 tbs basil simple syrup (as above)
  • 2 tbs white rum
  • ice
  • ½ cup sugar free ginger ale

Instructions

  1. To make the syrup, add the water and sweetener to a small saucepan and bring to the boil. Reduce to a simmer and make sure that all the sweetener is fully dissolved.
  2. Sprinkle a pinch (no more than eighth of a teaspoon) of xanthan gum over the mixture, and quickly whisk until it too has dissolved.
  3. Add the basil and peppercorns, and let steep for 10 minutes.
  4. Strain the syrup and transfer it to a flip top glass bottle or similar. This recipe makes about a cup of syrup and it lasts in the fridge for up to two weeks.
  5. To make the cocktail, add the lime and basil to a cocktail shaker and muddle them together to release as much juice and oil as possible. Add the prepared syrup and rum, and top up with ice.
  6. Close the lid, shake well, then strain into a tall glass. Add a few ice cubes and top up with the ginger ale.
