This is a simple recipe that I created because I wanted to make my guacamole bombs for a friend which used store-bought low carb breadcrumbs. But I was out of stock, and thought I could replace with pork rind crumbs – but then I remembered that my friend is vegan! So a little convoluted but I know I'll find lots of uses for them!
You will, of course, need some low carb bread to make these breadcrumbs. Here's my review of low carb and keto friendly options that you can buy:
How to Make Low Carb Seasoned Breadcrumbs
Breadcrumbs are typically made with stale bread, but if your bread isn't stale, leave it out of its container for a few hours or overnight. Break the bread up into rough pieces and place them in a food processor.
Pulse until breadcrumbs have formed. Transfer the breadcrumbs to a large sealable bag, and add dried oregano, dried thyme, salt, garlic powder, and black pepper.
Seal the bag and shake it to thoroughly distribute the seasonings into the crumbs. Next, empty it all out onto a large baking sheet in an even layer.
Toast the crumbs in a preheated oven for 5 minutes, then stir well and cook for another 5 minutes.
Let them cool thoroughly then transfer to an airtight container.

Ingredients
- 8 slices low carb bread (see Notes)
- 2 tbs dried oregano
- 1 tbs dried thyme
- 2 tsp salt
- 1 tsp garlic powder
- ½ tsp ground black pepper
Instructions
- Preheat the oven to 300F.
- Break the bread up into rough pieces and place them in a food processor. Pulse until breadcrumbs have formed.
- Transfer the breadcrumbs to a large sealable bag, and add dried oregano, dried thyme, salt, garlic powder, and black pepper.
